Coconut

Coconut is the fruit of the coconut palm, Cocos nucifera.  Coconuts have been cultivated and used in food for centuries in Sri Lanka.   The distinctive flavor of the Coconut kernel makes it a very popular food, and a wide range of meals are made with Coconut. Coconut has a hard shell encased in a fibrous outer layer. When the shell is cracked open, it reveals a fleshy white meat and a liquid that is known as coconut water.  The water found inside the shell is not the same thing as coconut milk, a popular creamy product which is actually made with the flesh of the coconut kernel. Coconut water is crisp, cool, and refreshing, and it is often used in drinks. It is also high in vitamins and minerals, making it popular.  The milk is made by squeezing   the flesh and extracting a rich, dense white liquid that is very high in protein and fat. Coconut milk is often used in curries and soups. It is also used to flavor drinks and desserts.

Coconut Fibre

Coconut fiber is obtained from the husk of the coconut. Coconut fiber has high lignin content and thus a low cellulose content, as a result of which it is resilient, strong and highly durable. The remarkable lightness of the fibers is due to the cavities arising from the dried out sieve cells.  Coir is obtained by retting for up to ten months in water followed by sun drying. When the fibre is dry, it is graded into bristle fiber combed, approx. 20 - 40 cm long and mattress fiber approx. 2 - 10 cm long. The best grade fibers are light in color, gold yellow fiber from not yet completely ripened nuts or brown fiber from ripe nuts. An excessively high water content in fibre results in self-heating and decay.  Therefore a moisture measurement must be carried out before accepting fibre and moisture-damaged fibre must be rejected.
